Grasing’s Lobster Macaroni and Cheese

1 # Macaroni- cooked and drained
12 oz. Raw lobster meat or lightly cooked and de-shelled; cut into ½” cubes
½ c leeks quartered and cut into 1/8” pieces
½ c White wine
1 c Heavy whipping cream
½ c Cheddar-shredded or finely diced
½ c Emmentaler or Swiss-shredded or finely diced
1 T Butter
Seasoning: nutmeg/ cayenne/ salt

To prepare: Slowly stew leeks and lobster over medium heat. Deglaze with white wine, and then add cream. Bring to a simmer: whisk in cheese, check seasoning. Add pasta, bring back to a simmer.

To serve: Divide between four dishes and serve. Garnish with toasted oil breadcrumbs or goat cheese if desired
